There are tons of great options that will give you a better pedal feel, without deleting the ABS. I'm not even really sure why you would attribute the ABS system to brake pedal feel or general stopability. Also, the bigger your calipers, the better your ABS will work. Now, a few things I'd recommend to upgrade are calipers/rotors/pads, bmc brace, braided brake lines, and a brake booster/master cyl from an auto 300zx. Once you've done these things, if your Z doesn't stop better than a modern sports car, you've got another problem going on. Also, the Z already has a well-tuned brake system that shouldn't need altered proportioning, unless you're putting on an ill-fitting BBK or aren't planning on matching the rears with an appropriately-matched BBK. If you insist on diving into a project, Wilwood makes a number of products that will help you out, from specific fittings to a brake master cylinder delete kit with a built-in proportioning valve. It's nice if you don't dd your car and you don't mind having to literally stomp on the pedal when you want the full force of the brakes.
